Dairy Belles Creamery was launched by sisters Perri and Kim Reesor in 2019 to share their love of dairy farming by making high quality speciality products from farm-fresh Ontario milk.

Perri and Kim always knew dairy farming was the life they wanted, following in the footsteps of their parents and grandparents as they grew up helping tend 200 black and white Holsteins on the family farm in Kawartha Lakes.

Tasting fresh cheddar made on the farm was a transformational experience which lead to their own experimentation with cheese production. Dairy Belles Creamery will be producing halloumi - semi-hard, unripened, grilling cheese - as their first product, with plans for more unique cheeses, yoghurts and other products to follow.

Halloumeh

Dairy Belle’s HALLOUM'EH cheese is a semi-hard, unripened, slightly springy cheese made from Ontario cow’s milk. Raw, its texture is similar to that of a mozzarella or feta. Once grilled, HALLOUM'EH carmelized crusty exterior and takes on a rich creamy texture on the inside, perfect for the BBQ, to top a salad or just enjoy on its own.

Halloumi’s high melting point comes from putting the cheese curds back into hot whey. This changes the pH level of the cheese and allows it to not melt when heated. This is what helps form a caramelized crispy exterior while maintaining a rich creamy texture on the inside.

Deliciously savory, balanced out with a creamy, buttery finish, Halloumi is best served grilled or pan-fried, and warm. Pair it with watermelon, wrap it in bacon, or add it to a burger - this cheese won’t disappoint with its crispy crust and soft interior.

Once you try halloumi cheese, its salty deliciousness will imprint on you forever. It’s not only the flavour that is seriously addictive, it’s also that luscious squeaky texture which is not replicable with many other cheeses. Pairs best with lemon, mint, watermelon, and honey.
